Rêveuse Recipe: White Chocolate Chip Cocoa Cookies

It's Friday today which only means one thing.... recipe time! We both have immensely sweet tooths and cookies are definitely something we love to snack on every now and again. We're still on the hunt for the perfect cookie recipe because there's something that's still missing that oomph, however we really enjoyed the outcome of this recipe by our trustworthy source once upon a chef! These are great to make in batch and can even be stored in the freezer if you want to save some for a later date. Recipe inspired by onceuponachef

1 1/4 cups plain flour
1/2 tsp baking soda
pinch of salt
1/4 cup cocoa powder
1/2 cup unsalted butter
1/2 cup light brown sugar
1/2 granulated sugar
1tsp vanilla extract
1 large egg
1 cup white chocolate chips

SERVES: 8 medium sized cookies
DURATION: 1 hour

In a bowl, mix together the flour, baking soda and salt. Pass the cocoa powder through a sieve and add it to the dry mixture until evenly combined.

In another bowl, whisk the butter, sugar and vanilla extract until creamy. Add in the eggs and beat in until light and fluffy. Gradually add in the flour mixture and fold in until combined. Lastly, add in white chocolate chips and mix until the chips are evenly distributed. Chill in the fridge for about half an hour until it is firm to the touch.

Preheat the oven to 180°C and place the racks between the middle and upper ends of the oven. Distribute the cookie dough mixture equally onto parchment paper. We used a spoon but you can also use an ice cream scoop for ease. Bake for 10 minutes before transferring to a wire rack to cool.
