Rêveuse Recipe: Chocolate Chip Banana Loaf

Recently we have been buying more fruit, in particular, bananas. However, sometimes we don't get through the bunch, so we are left with browned bananas in our fruit bowl which only means one thing... to make banana bread! Banana bread is so delicious and extremely fool proof whilst being quick to make, meaning that you can bake it in the morning and eat it by brunch time. I particularly love eating it hot out of the oven, whereas Mary likes hers when it's cooled down with a cup of English tea. Even though it's technically a cake, the added bananas just make it seem like your eating something wholesome and healthy! We have also tried other variations such as adding walnuts to give it an extra crunch. We also experimented with an amazing chocolate banana bread with coconuts shreds, which went down a treat! INGREDIENTS
1/4 cup unsalted butter
1 medium egg
2 ripe bananas, mashed
1 tsp vanilla
1 cup plain flour
1/4 tsp baking soda
1/2 tsp baking powder
1/2 tsp salt
3/4 cup chocolate chips

SERVES: 1 small loaf
DURATION: 1 hour

RECIPE
In a bowl, cream the butter and sugar until a light and creamy consistency. Whisk in the egg, mashed bananas and vanilla extract. Tip: the riper the bananas, the sweeter the banana cake so if you have a really brown banana, don't let it go to waste! 

Sieve in the flour, baking powder, baking soda and salt until combined but don't overmix! Fold in the chocolate chips. Preheat the oven to 170°C. Pour the mixture into a small loaf container which is lined with baking paper.

Bake for 50-60 minutes until fully baked. Cool the loaf down before serving. Enjoy!
