Rêveuse Recipe: A Quick and Easy Lunch Idea

Sometimes we want to spice our lunches up during the week, however we just never have the time or any ideas of what we want make. As we are both currently working remotely, we decided to rustle up a quick and easy lunch that consists of flatbread, guacamole, oven baked vine tomatoes and a chickpea side dish. It's super quick to make, all it takes is 20 minutes of your lunch time, so there's no excuses! This vegetarian meal is just what we needed, keeping our belly full and happy for the rest of the day. 8 pieces of flat bread
vine tomatoes
olive oil

3 avocados
1/4 red onion
1/2 lime
1 tomato
pinch of salt and pepper

1 tin of chickpeas
1/2 jar of tomato and basil sauce
3/4 red onion
2 clove garlic

Serves: 4
Duration: 20 minutes


Preheat the oven to 180 degrees. Put the vine tomatoes on some tin foil and drizzle some olive oil on top. Sprinkle some salt and pepper and place in the oven for 20 minutes until the tomatoes are soft.

Whilst the tomatoes are roasting, mash up three avocados in a bowl until smooth (or leave any chunky bits if you prefer that in your guac!). Finely chop up the red onion and tomato and add it into the bowl along with with a pinch of salt, pepper and a squeeze of lime juice. Of course you can alter it to your taste buds but this is our foolproof go-to guac recipe. Give it all a good mix and it is ready to go into the fridge!

For the chickpea dish, fry up the remainder of the red onion and garlic in a saucepan. Once the onions are soft, throw in the tin of chickpeas and let it simmer for a couple of minutes. Add the tomato and basil sauce into the pan along with the paprika and pepper seasonings. Just before the dish is ready to serve, pop the flatbreads into the oven so they are toasty and warm. The vine tomatoes should be ready to take out the oven once the chickpea dish has been finished. Serve your dip and chickpea filling with your toasted flatbread and enjoy!
