Rêveuse Recipe: Chocolate Banana Coconut Loaf

Now that we're in the midst of the season where we're cozied up in our wooly indoor wear with a mug of hot tea in hand, now is the perfect time to get our baking hats on once again to bake some deliciously moreish autumnal desserts. What better ingredient than chocolate to get ourselves in the mood for autumn baking, an ingredient for the soul.

Meanwhile, although we are both exercising less frequently than summer (our excuse is that we have to store the extra fat for winter :P ) we are both trying to find alternative ways to stay healthy, including eating food that is delicious, yet somewhat good for us. Whilst browsing round our supermarket we came across coconut flour, which we thought was an interesting ingredient to trial out. Banana bread is one of those fool proof recipes you can never get wrong, so we thought to add it into this recipe along with the chocolate for a different take on the classic banana bread. The extra coconut flakes just adds that additional texture which we love, whilst not being too coconutty and overpowering. Through researching we found that coconut flour should not be substituted for regular plain flour to keep its light fluffy texture for cakes, but we like to think it's a healthier addition and would love to add this to other recipes!

3/4 cup plain flour
1/4 cup coconut flour
1/2 cacao powder
1 tsp baking soda
3 large bananas mashed
1/4 cup unsalted butter melted
1/4 vegetable oil
3/4 cup light brown sugar
1 large egg
1 tsp vanilla extract
handful of coconut shreds
pinch of salt
roughly chopped dark chocolate 

SERVES: 1 Loaf approx 8-10 slices
DURATION: 1 hour

Preheat the oven to 180°C and butter the loaf tin and line with a baking sheet.

Sieve and stir together the flours, cocoa powder, baking soda and salt. In another large bowl stir together the mashed bands, melted butter and oil until combined. Stir in the brown sugar, egg and vanilla extract. The consistency should look smooth with banana clumps.Stir the dry ingredients into the wet, making sure not to overmix everything, before finally adding the dark chocolate and handful of coconut shreds.

Pour in the batter into a loaf tin and place into the oven for approx 55mins. Serve with a sliced banana on top, a drizzle of chocolate ganache and coconut shreds!
