Rêveuse Recipe: Christmassy Chocolate Gingerbread Men

When you think of end of the year festive desserts what's more Christmassy that gingerbread men! We have baked this festive treat since we were little and it's come to be a great and easy recipe to bake for you and your loved ones! This year we decided to bake a different variation on the classic gingerbread men by adding in cocoa powder! Who doesn't love chocolatey nibbles during the holiday season too!? We also added in more spice as we like our cookies to be really flavourful whilst making sure not to overpower the cocoa too. Have a go this holiday season and treat your loved ones to some aromatic and delicious home baked gingerbread men!

115g plain flour
1 tsp baking soda
1 heaped tsp ginger
1/2 tsp ground all spice
1/2 tsp ground nutmeg
a pinch of ground pepper
56g softened unsalted butter
25g granulated sugar
28g packed dark brown molasses sugar
1/2 egg
2 tbsp golden syrup
1 heaped spoon of cocoa powder

for the icing 
1 egg white
1 tsp lemon
150g powdered sugar

SERVES: 12 gingerbread men
DURATION: Approx 1 hour

In a bowl mix together the flour, baking soda, salt, spices and pepper. If you like your cookies to be very flavourful you can also add in a tiny bit extra spice!

In another bowl beat the butter and sugar until light and fluffy before slowly adding in the egg and the golden syrup. Add in the flour mixture and cocoa powder and mix on low speed until combined. the dough should be quite sticky. Wrap in cling film and chill for at least an hour.

Line baking trays with baking paper and preheat the oven to 175°C. Take out the chilled dough and roll out onto a floured surface, We found the dough to be quite sticky still so don't be shy with flouring the dough and the surface to make it easier to work with! Using your cookie cutters, cut out your shapes before placing onto your tray. You should have extra dough so continue to roll into a ball and rolling out flat and cutting again. Bake in the oven for about 10 minutes. When you take it out of the oven it might be quite soft still but leave it to cool and it will start to harden. 

For the icing whisk the egg whites until foamy and add in the powdered sugar and lemon. The icing can now be used for decorating along with the chocolate decorations so get creative!
